Cowboy Bebop
I admit that there were a couple of forgettable episodes. Aside from that, my disappointment is mainly from Cowboy Bebop not utilizing more episodes between Spike's and Vicious' backstory and rivalry. The episodes in the first half and ending between Spike and Vicious were awesome to watch and I really enjoyed them. It felt like potential was wasted. I hope Watanabe can come back to the series and do a prologue OVA. That would be nice.

Hellsing Ultimate
When the Major did that long ass speech on the blimp, that's when I didn't enjoy Hellsing Ultimate as much as I did before. Lack of Alucard's presence until the end also didn't help. I felt they could have shown more scenes depicting the conflict between the Germans, the Englishmen, and the Catholic group as I thought their coverage on it was lacking. Other than the Walter scenes and the Alexander scenes, it felt like they threw in random scenes, giving an unorganized feel and the pacing was off.

Monogatari Series
I didn't like their fast moving "powerpoint" text. Although it's basically a summary, it's something that doesn't need to be broken down and then sped up. They can just display the entire summary in one screen for like a minute. It's not like they put scenes in between.
There are a few arcs that were really slow in pacing to the point where I felt they didn't need all these episodes. The most glaring one I can remember is Nisemonogatari Karen's arc.

Shokugeki no Souma
There are a couple of things. When the show isn't centered around Souma, I've noticed the show isn't as interesting and the quality dips. The other characters aren't developed as well as Souma (obviously). This becomes especially apparent in the Ni no Sara (2nd season). Speaking of 2nd season, the tournament in the second season wasn't as exciting to me as the first one. It felt formulaic and repetitive. After that arc ended, the help a restaurant arc was an interesting idea, but the pacing was too fast. IIRC, only 4 episodes isn't enough. Plus, I was interested in seeing the other duo dynamics besides the one involving Souma.

Re:Zero
The election/royal selection episodes were boring. It was way too long with really nothing happening other than Subaru getting rekt. Other than Subaru, characters felt a bit too generic, but that's not really a big field I care about if the light novel will get more anime adaptation. The big one is whenever Subaru interacts with Emilia. This is not because I dislike Emilia, it's because most often than not, the forced "comedic" act that Subaru tries to display is cringeworthy.

Boku no Hero Academia
It was hard to enjoy watching the interaction of Deku and Bakugo (outside the battlefield ) as one of the main focal point of the series. I didn't enjoy it at all. Bakugo was YGSing to the point that it was actually annoying to watch. It's fine being angry, especially since it fits with his explosive powers, but his entire purpose was him being angry at Deku, who continues to take in that shit even post Bakugo vs Deku training match. It didn't help that it was petty reasoning. Deku continually allowed this shit to happen since his childhood AND still want to hang out with Bakugo, which makes it hard for me to like Deku as a character.

Akame Ga Kill
I thought the focal character shouldn't have been Tatsumi, but in a sense, that lead to a much more shocking ending, so I won't complain about that. The one thing I can recall disliking was when after the battle of Kuroma and Akame, they made up way too fast soon after the battle even though Kuroma absolutely had strong desires to kill her sister. They took down that creature and everything went all peachy just before Kuroma was laid to rest.

Yeah that election arc was kinda dumb and a weird change of pace.

Girls Und Panzer Der Film
Very, very, very, very, very minor complaint is that the middle part was felt a little dragged out on the reactions and behavior after the students hear the school will be closing (again). I guess if you like the feels of seeing "cute" girls crying or being sad, I suppose you won't have an issue. I wasn't bored but I was hyped as fuck to see the next action scene so I got impatient.

Bakuman
The romance was the typical corny love of not seeing each other until blah and any sort of contact (including nonphysical) seems to please them as a couple.
(Wasn't ever in my favorites, but it is ranked pretty high before some of the ones listed here)
